We've had the hardest time finding breakfast restaurants we would return to in New York, but Fort Defiance is an exception, and yes, we've already been back. As someone who worked in the service industry for ten years, primarily in breakfast restaurants, I appreciate a high quality casual restaurant more than I can put into words. The folks at Fort Defiance are doing it right. They source their eggs and the majority of their seasonal produce from Lancaster Farm Fresh Co-op, their milk is from Batten Kill Family Creamery, and their bread is made fresh in Soho at Grandaisy Bakery which is right down the street from their butcher shop, Pino Prime Meats. I had their all-american breakfast and Amy and Zack each had the biscuit egg sandwich. Both meals were a+++. We all had coffee which was fantastic as well - they serve pour over drip coffee along with espresso drinks. Considering Owen is up early we were happy to discover that these guys open at 9am for breakfast/brunch on the weekends which is slightly rare in our area where brunch seems to being at lunch time. On top of it all fort defiance is kid friendly - high chairs and all! If you're in the red hook area i definitely recommend checking this place out, plus they serve lunch and dinner as well.
